Barbacoa Ground Beef Baked Flautas w/ Queso Dip
Ingredients
- 1 lb. ground beef, lean
- 1/2 yellow onion, diced
- 4 tsp. Spanglish Asadero Barbacoa seasoning, 1 tsp. separated for queso dip
- 1/2 cup water
- 10 soft taco or fajita-size tortillas
- Cooking spray
QUESO DIP:
- 12 oz. Velveeta, cut into 1/2-inch cubes
- 1/2 cup cheddar cheese, shredded
- 1 roma tomato, diced
- 1 jalapeño, seeded and diced
- 1/4 cup heavy cream
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder

Directions
- Preheat the oven to 425℉ degrees.
- Spray a large baking sheet with cooking spray and set aside.
- Brown ground beef in a medium-sized pan over medium-high heat.
- Stir in yellow onion and sauté until translucent, about 3-4 minutes.
- Stir in 3 tsp. Spanglish Asadero Barbacoa seasoning and water. Bring to a simmer and cook for 6-8 minutes until liquid has evaporated.
- Wrap the tortillas in a damp paper towel and heat the min the microwave for 10-15 seconds, to make them more pliable.
- Spoon 3 tbsp. ground beef mixture onto each tortilla.Roll tightly and place seam-side down on the prepared baking sheet.
NOTE: You can secure your tortillas with a toothpick if you are having trouble keeping them closed. - Spray tops of tortillas with cooking spray.
- Bake for 10 minutes, flip tortillas, and bake for an additional 5 minutes until golden brown.
- While tortillas bake, combine Velveeta, cheddar cheese, tomato, jalapeño, heavy cream, 1 tsp. Spanglish Asadero Barbacoa seasoning, garlic powder, and onion powder in a medium saucepan. Cook over medium heat for 5-7 minutes, stirring frequently, until the cheeses are melted and the mixture is smooth.
- Serve baked flautas with a side of warm queso dip for dipping. Enjoy!
