Barbacoa Ground Beef Baked Flautas w/ Queso Dip

Ingredients

  • 1 lb. ground beef, lean
  • 1/2 yellow onion, diced
  • 4 tsp. Spanglish Asadero Barbacoa seasoning, 1 tsp. separated for queso dip
  • 1/2 cup water
  • 10 soft taco or fajita-size tortillas
  • Cooking spray

QUESO DIP:

  • 12 oz. Velveeta, cut into 1/2-inch cubes
  • 1/2 cup cheddar cheese, shredded
  • 1 roma tomato, diced
  • 1 jalapeño, seeded and diced
  • 1/4 cup heavy cream
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder

Directions
  1. Preheat the oven to 425℉ degrees.
  2. Spray a large baking sheet with cooking spray and set aside.
  3. Brown ground beef in a medium-sized pan over medium-high heat.
  4. Stir in yellow onion and sauté until translucent, about 3-4 minutes.
  5. Stir in 3 tsp. Spanglish Asadero Barbacoa seasoning and water. Bring to a simmer and cook for 6-8 minutes until liquid has evaporated.
  6. Wrap the tortillas in a damp paper towel and heat the min the microwave for 10-15 seconds, to make them more pliable.
  7. Spoon 3 tbsp. ground beef mixture onto each tortilla.Roll tightly and place seam-side down on the prepared baking sheet.
    NOTE: You can secure your tortillas with a toothpick if you are having trouble keeping them closed.
  8. Spray tops of tortillas with cooking spray.
  9. Bake for 10 minutes, flip tortillas, and bake for an additional 5 minutes until golden brown.
  10. While tortillas bake, combine Velveeta, cheddar cheese, tomato, jalapeño, heavy cream, 1 tsp. Spanglish Asadero Barbacoa seasoning, garlic powder, and onion powder in a medium saucepan. Cook over medium heat for 5-7 minutes, stirring frequently, until the cheeses are melted and the mixture is smooth.
  11. Serve baked flautas with a side of warm queso dip for dipping. Enjoy!
